I came across this fabulous taste by sheer chance. I was cooking some veggies – just plain water and salt kind of cooking – and glanced upon a piece of blue cheese in the fridge. Blue cheese in veggie soup (or veggie water, really)? I poured a little bit in a cup and added a teeny tiny piece of cheese for it to melt and for me to try – and it tasted great!
So if you want an easy soupy cooked veggies meal – it’s pretty friendly on calories yet has a hint of that sultry cheese taste in the background – this is a must try….well, not ‘must’ but let’s say could-try 🙂
And all you do is cook the veggies, season with salt-n-pepper and add a piece of blue cheese. Cook the hardest ones first…
- Carrots
- Onion
- Potatoes
- Cauliflower
- Broccoli
When cooked add blue cheese to melt – about a table spoonful. Salt and pepper. And that’s it. It’s not a soup – it’s a trick! 🙂
